One of the cornerstones of our culinary philosophy is our connection to our region and the unique products produced here. That’s why most of our suppliers are just a stone’s throw away, allowing us to always use fresh, farm-fresh ingredients. Local is simply brilliant!
However, this wouldn’t be possible without our long-standing and reliable suppliers and partners, who are dedicated with passion and heart to producing top-quality regional food locally and maintaining the circular economy within our valleys. These are values you can actually taste. Because in the Zillertal and Tuxertal, we have the best conditions for producing high-quality food: fresh water, clean air, fertile soil, but above all, time-tested expertise and a deep love for the region.
OUR FARM, "WEBERHOF," IN OBSTEIG
Our farm—the Weberhof—is located in Obsteig, above the Mieming Plateau. It has been family-owned since 1960 and has been run with great love and dedication by Michael Huter and his wife Eva-Maria since 2001. The 65-hectare farm is home to approximately 30 calves, 20 mother cows, 30 bulls and oxen, about 10 mountain sheep, and over 30 chickens. We also raise original Brown Swiss cattle and cultivate nearly 42 hectares of grassland, as well as grazing and hay pastures. The numerous products from our farm are freshly processed on-site. A special feature: we have our own aging cabinet in the hotel for our dry-aged ox meat.
MEAT FROM TYROL
The Demeter-certified “Lengau” farm in Ginzling in the Zillertal Valley has been run by the Kern family since 2006 and supplies us with high-quality pork and dairy products. The Michaln Hof in Tux is also one of our long-standing meat suppliers. The organic mountain farm Untersillerhof in Neustift in the Stubai Valley has been owned by the Siller family for 10 generations. They supply us with high-quality quail meat and quail eggs. The Rohrmoser family of Wagyu.Tirol in Hippach in the Zillertal ensures the highest quality in the delivery of exclusive Wagyu beef. Additional high-quality meat products are supplied to us by the Gasser butcher shop in Aschau in the Zillertal.
Zillertal Meadow Eggs from the Gartnerhof
The Gartnerhof in Uderns, Zillertal, is run by the Hanser family with great commitment and dedication. Four generations living under one roof ensure that everything runs smoothly on the farm and that the cows and hens are well cared for. In July 2020, the family launched the “Zillertaler Wiesen Ei” project. Since then, over 300 chickens have found a home in the meadows surrounding the farm and in the mobile chicken coop. The vast open spaces and top-quality feed make the hens simply happy all around, and this is reflected in the quality of the products. The Zillertaler Wiesen eggs are delivered fresh to us several times a week and end up as ingredients in our dishes or as a delicious breakfast egg on your plate.
DAIRY PRODUCTS FROM THE FARMERS OF HINTERTUX
The pastures of the Zillertal and Tuxertal valleys have been cultivated by farmers since time immemorial. Whether used purely as grazing land or to provide cows with ample space to roam, the fresh grass and herbs that grow in the meadows throughout the valley form the foundation of milk production and ensure the high quality of our diverse dairy products. That is why it is important to us to make the most of this quality and use the products from the Hintertux Dairy Cooperative in our dishes. Products such as Zillertal farm butter, milk, and yogurt are delivered directly to us by the farmers. The Erlebnis Sennerei Zillertal is also a long-standing supplier and provides us with premium products made from hay milk. For over 60 years, the Kröll family business has been producing and refining hay milk products from the Zillertal. Above all, genuine quality, a sustainable cycle, and a guaranteed love for animals are very important to the family and form the cornerstones of their philosophy.
PASTRIES FROM THE STOCK VILLAGE BAKERY IN LANERSBACH
“With nature as our partner” is the motto of the Stock family, now in its fourth generation of running the
Stock Village Bakery in Lanersbach. To prepare their various breads and pastries, they use carefully selected, top-quality ingredients and Grander water. All baked goods are made by hand according to traditional recipes. You can see and taste this dedication! That’s why the Stock Village Bakery is a long-standing supplier that delivers fresh bread and pastries to us every day. So you can enjoy delicious farmhouse bread and fresh rolls right at your breakfast table.
Distillates from Tyrol
You’ll also find particularly fine spirits in our bar. Here, we rely on the best distillers from Tyrol and East Tyrol. Armin Fankhauser’s Genuss.Brennerei.Fankhauser in Vorderlanersbach offers top-quality spirits and liqueurs directly from the Tux Valley with its extensive selection. The Innerummerland Distillery, run by Hannes Dengg, is located on the Schwendberg in Hippach in the Zillertal. Schnapps has been distilled at the Erbhof for over 300 years—a tradition that is reflected in the products. The
“Schwarzer Brennerei” schnapps and liqueur distillery from East Tyrol supplies us with high-quality spirits made from local fruit. The various products from this distillery have won numerous awards and are renowned far beyond the region’s borders.
FISH AND SHRIMP FROM TYROL
The Moser Fish Farm in Aschau im Zillertal has been run by the Brindlinger family since 2015 and is our supplier of fresh fish. More than 10 different species are sustainably farmed there, slaughtered directly on-site, and processed fresh. This ensures that we receive fish products of the highest quality. The Alpine shrimp is a specialty that is delivered directly to us in the Tux Valley from Hall in Tirol. Daniel Flock and Markus Schreiner raise top-quality “White Tiger Shrimp” in their own recirculating aquaculture system, using ecological and sustainable methods and exclusively the finest Tyrolean water.
FRUIT AND VEGETABLES FROM FARMERS IN THE INN VALLEY
The Tyrolean Inn Valley is known for growing countless varieties of vegetables and is sometimes referred to as “Tyrol’s vegetable basket.” The vegetables for our kitchen are delivered directly from the Inn Valley to us here in the Tux Valley. Our main supplier is Johann Posch from Thaur. Various vegetables such as bell peppers, zucchini, cucumbers, tomatoes, lettuce, and many other products are delivered fresh to us several times a week. This allows us to offer our guests the highest quality in our dishes.
